Made up about 3lbs of mesquite flavored jerky.
I used ground venison and mixed in the mesquite seasoning last night. Let it sit over night. This afternoon I used a jerky blaster to get nice strips of meat and baked it for 60-70 minutes at 200 degrees. Good snacks for the duck blind.
Basic jerky recipe, but still really good.
3 lbs meat, sliced 1/8" thick
8 oz beer- any kind works
1 1/2 T salt
2 T pepper
1 t cure
1 t garlic powder
1 t onion powder
1 t celery salt
1 t crushed red pepper
1/3 cup worchestire
1/3 cup soy sauce
Combine all ingredients except meat...
2-3 goose breasts depending on size
3/4 cup soy sauce
1 cup water
1/4 cup worcestershire sauce
1/4 cup brown sugar
2 tea liquid smoke
2 cloves garlic
black pepper, crushed red pepper, and hot sauce. Do the last 3 depending on how hot you like it.
